Brae is defined by "deep connection to the land." Under the visionary leadership of Chef and Owner Dan Hunter (formerly of Spain’s Mugaritz and Royal Mail Hotel), the restaurant offers a hyper-seasonal menu harvested daily from its own 30-acre estate. The property features extensive vegetable gardens, an olive grove, an orchard, and a grain crop used to mill flour for their famous sourdough. The dining room, housed in a converted farmhouse, is minimalist, light-filled, and serene, allowing the complex, nature-inspired dishes to take centre stage. From the iconic iced oyster to sun-ripened fruits transformed into ethereal desserts, Brae delivers a high-energy yet peaceful atmosphere that celebrates the raw beauty of the Victorian landscape with world-class technical precision.
