Dier Makr is a celebration of "creative restraint." The name—a phonetic play on a Danish term for "animal field"—hints at the restaurant’s Scandinavian-inspired, ingredient-led philosophy. Under the direction of Chef Kobi Ruzicka, the kitchen moves away from traditional à la carte formats to present a single, evolving Chef’s Tasting Menu. The experience is intimate and focused, with an open kitchen that allows guests to witness the meticulous assembly of dishes that highlight native botanicals, local seafood, and organic produce.
