Housed in an unassuming brick building on the industrial edge of Mount Gambier, each Elementary by Kirby Shearing sitting reflects what Kirby is cooking with at that moment, shaped by the region's producers, growers, and seasons.

Since opening in 2023, it has quickly become one of Australia's most exciting regional restaurants – listed as one of Australia’s Top 100 Food Experiences by delicious. Magazine and ranked #2 in Gourmet Traveller's Top 10 South Australian Restaurants (2024).

Formerly known as Elementary by Soul Co Projects, Kirby’s cult destination is the only hatted restaurant in Mount Gambier by Australian Good Food Guide and the highest-rated hatted restaurant on the Limestone Coast.

Kirby sources, cooks, and plates every dish largely alone, guided by close relationships with the region's producers and a deep commitment to local and seasonal cooking. He is a passionate advocate for regional dining, sustainable practice, and mentoring emerging chefs.
