Here, a diverse "parade" of approximately 15 to 20 courses is served piece-by-piece, featuring pristine seafood sourced both from local Australian waters and seasonally flown in from Tokyo’s Toyosu Market. The service is legendary for its attention to detail, famously adjusting the placement of sushi based on whether a diner is left-handed or right-handed.
